Food. Who doesn't like to eat "rico" this days? I am going to share with you a deliciuos Peruvian appetizer I know other Latinos enjoy very much. I am also very interested in getting to know what other dishes you love [Latino dishes], so if you want drop us a recipe.

Papa a la Huancaina (Potatoes with Huancaina Sauce)
For 4 persons/servings
Ingredients:
-1 lb White Idaho potatoes (aprox. 1 medium potato for each person)
-1/2 lb "queso fresco" (available in some supermarkets and Latino bodegas) also it can be replaced with Feta Cheese
-1/2 can of evaporated milk
-2 Tablespoons of Canola Oil (to give moisture)
-2 Tablespoons of Aji Amarillo paste (available in some supermarkets and Latino bodegas) known as yellow Peruvian chili.
-4 or 6 saltine crackers
-salt
-pepper

For Presentation:
-1 American Lettuce
-4 Black Olives
-2 Hard Boiled Eggs (cutted in halfs)

Preparation:
Cook the potatoes until done, peel the skin, cut then in loafs. Aside in a blender, put the queso, milk, salt, pepper, crackers, canola oil and aji amarillo. Mix until well blended into a thick sauce and it is ready! For presentation put one big leave of lettuce in a small plate and put 4 loafs of potatoes on top of it, then add the sauce as desired, decorate with 1 olive on the side to give color and put one half hard egg to give and accent. Servido.-
